Berry Smoothie Bowl

Like many other recipes, I created this berry smoothie bowl “by accident”. I just traveled to Germany where I grew up and my family lives. This is the first time I have been here since I started the autoimmune protocol and made pretty significant dietary changes. I have to admit that I am struggling with the temptations and the adjustments here. I didn’t really think about how different it would be in another country away from my daily routine and with no access to a few of the ingredients that I use a lot.

So in a desperate attempt to make a smoothie with a lot of fat to keep me full while I am out and about I just threw a bunch of things in a blender. I was shocked by how amazing it tasted. I haven’t had yogurt in years and this is the closest to yogurt I have tasted. But it is dairy-free and autoimmune protocol friendly.

It is super delicious and my family, and let’s add most are dairy lovers, can’t get enough of it. I originally did it only with strawberries. But this morning my mom surprised me with making this mixed berry smoothie bowl. She added blueberries and it is so so yummy. She called it the Smogurt 😉

Ingredients in the Berry Smoothie Bowl

This Berry bowl is packed with antioxidants vitamins and minerals from all the fruit. It also has a good amount of healthy fats. If you are not used to or are sensitive to a lot of fat, be careful not to eat too much of it in the beginning.

  • Banana
  • Mango
  • Strawberries
  • Blueberries
  • Avocado
  • Coconut cream
  • Coconut oil

How to Include this Smoothie Bowl into Your Day

  • As breakfast: Since there is no protein source in this smoothie bowl it is not a complete meal. To make it a complete meal you can combine it with eggs for breakfast or fish and meat. Or use your favorite protein powder and blend it with all the other ingredients.
  • As a dessert: The natural sugars from the fruit give this smoothie bowl a lot of sweetness.
  • As a snack: Add a handful of nuts to it to add some protein to make it a more balanced snack. Of course, a small piece of meat or fish works as well.

Berry Smoothie Bowl

Ingredients
  

  • 1 banana yellow banana (not overripe)
  • 1/2 avocado
  • 1/2 mango
  • 5 organic strawberries
  • 2 Tbsp organic blueberriess
  • 1/2 can fullfat coconut milk (additive free), scoop out the the solid part on top of the coconut milk can
  • 1 Tbsp coconut oil

Instructions
 

  • With a spoon, scoop the thick creamy part of the coconut milk and put it in the blender. Add the rest of the ingredients and mix until smooth. Enjoy!

Notes

  • I recommend enjoying it right away. If you keep it in the fridge for awhile the banana taste gets very overpowering.
  • Always buy canned full-fat coconut milk. Preferably without any additives, the fewer the better. The best option is just coconut and water as the ingredients. Also, opt for a BPA free can. The cream will rise to the top, especially if you put it in the fridge overnight. If the coconut milk can does not"produce" half a can of coconut cream you can use a bit more coconut milk to make it to half a can.
  • Feel free to use regular yogurt instead of coconut cream if you tolerate it.
