Chimichurri with a Twist

This delicious chimichurri goes with your favorite protein. It is a healthy dip featuring parsley, cilantro, olive oil, avocado, garlic, lime and shallot.

Ingredients
  

  • 1 cup cilantro ((packed))
  • 1 cup parsley ((packed))
  • 1/2 medium size avocado ((try 1 avocado for a creamier version))
  • 3 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1/2 shallot
  • 1 clove garlic ((try 2 if you like it more spicy))
  • 1/2 lime, squeezed
  • 1/2 tsp salt

Method
 

  1. Place all the ingredients in a blender and mix until smooth.
  2. Serve with your favorite protein
  3. Enjoy!
