Chimichurri with a Twist

This delicious Chimichurri goes with your favorite protein. It is a healthy dip featuring parsley, cilantro, olive oil, avocado, garlic, lime and shallot. Perfect all year around but I love this for summer BBQs. It is AIP, Paleo, dairy free and gluten free.

Chimichurri with a Twist

This chimichurri is one of the most delicious things I have ever had. I cannot stop eating it. I have therefore made it for dinner every night this week and my husband is obsessed with it as well. It is super easy to make, all you have to do is place the ingredients in a blender, and voila, the most delicious dip sauce is done.

We have had it with broiled salmon and fried plantains for the past nights. That combination was incredibly delicious. I wonder if I could ever get tired of this dish…I literally think of this sauce all day long. And the best part about it is, that it is so good for you. I was about to name this sauce the detox chimichurri because it features some of the healthiest ingredients. It is oh so flavorful, creamy, fresh…I don’t really have words to describe how amazing it is. Give it a try and let me know what you think.

Chimichurri Ingredients

  • parsley
  • cilantro
  • shallot
  • garlic
  • avocado
  • olive oil
  • lime
  • apple cider vinegar
  • salt

As you can see some of those ingredients are not your regular chimichurri items, hence chimichurri with a twist.

How to Pair this Dip

  • With salmon
  • With steak
  • With grilled sweet potatoes
  • With fried plantains

How Many Servings Does it Have?

I would say this recipe is for 2 people but could be for 4 as well if you just use a little bit of it. As I mentioned before, my husband and I are obsessed with it, and even though it looks like quite a lot of sauce for the two of us, it is gone within minutes.

Servings 2 people

Ingredients
  

  • 1 cup cilantro (packed)
  • 1 cup parsley (packed)
  • 1/2 medium size avocado (try 1 avocado for a creamier version)
  • 3 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1/2 shallot
  • 1 clove garlic (try 2 if you like it more spicy)
  • 1/2 lime, squeezed
  • 1/2 tsp salt

Instructions
 

  • Place all the ingredients in a blender and mix until smooth.
  • Serve with your favorite protein
  • Enjoy!

Notes

  1. If you love garlic and want the chimichurri to be a bit spicier try 2 garlic cloves.
  2. If your avocado is very small or if you would like a milder, creamier sauce use 1 whole avocado.
