Apple Cranberry Chicken Liver Pate

Ingredients
  

  • 1 lbs chicken livers pasture-raised
  • 1 lbs chicken hearts pasture-raised
  • 1 lbs pork belly pasture-raised
  • 2 shallots
  • 1 apple
  • 1 cup cranberries
  • 4 cloves garlic
  • 8 leaves sage
  • lard for pan frying
  • salt for pan frying (maybe 1/2 tsp)
  • 1/2 cup extra virgin olive oil
  • 4 Tbsp apple cider vinegar
  • 1 tsp salt
  • 1/2 tsp cinnamon
  • 2 tbsp wtare

Notes

1 lbs liver
2 Tbsp duck fat (lard)
1/4 cup onion (small onion)
2  garlic clove
1 Tbsp  sage
1 cup cranberries
1/4 cup water
1/4 cup olive oil
1 tsp salt
1/4 tsp cinnamon
 
duck fat to seal the liver
3 small mason jars
 
crackers:
1/2 cup cassava flour
1/4 cup arrow root flour
1/4 cup coconut flour
pinch salt
1/4 cup olive oil
1/2 cup water
