Halloween Gummies

Right in time for the spooky season, these colorful gummies are delicious and an easy way to make a healthy Halloween or Día de los Muertos treat for the whole family. They come in two flavors: Orange and raspberry. For those with food allergies or sensitivities, get excited because these bad boys are gluten, dairy, and nut free, paleo and AIP.

Equipment

  • candy molds. I used 2 sets with 10 molds each. Each mold cavity measured 1.7inch in length, 1.2inch in width.

Ingredients
  

Orange flavor

  • 1 cup freshly squeezed or bottled fresh orange juice (not from concentrate)
  • 1/4 cup gelatin powder
  • 3 Tbsp raw honey

Raspberry flavor

  • 1.5 cups frozen raspberries
  • 1/2 cup coconut milk
  • 1/4 cup water
  • 1/4 cup gelatin powder
  • 1/2 tsp vanilla extract (alcohol free for AIP)
  • 3 Tbsp raw honey

Instructions
 

  • If you are doing both flavors you can use half of the ingredients each.

Orange flavor

  • Pour orange juice into a small saucepan. Sprinkle the gelatin powder on top, stir and let it bloom for a minute or so.
  • Heat the saucepan on medium-low heat until the gelatin has melted. Use a whisk to make sure there are no lumps. Add the honey and mix well.
  • Pour the mixture into molds and place it in the fridge for about an hour.
  • Carefully remove the gummies from the molds. I recommend loosening all the edges first so nothing gets stuck.
  • Enjoy or store in an airtight container on the counter for a few days or in the fridge for up to 2 weeks.

Raspberry flavor

  • Place the raspberries, coconut oil, and water in a blender and mix until smooth.
  • Pour the mixture through a strainer into a small saucepan to get rid of the seeds. Sprinkle the gelatin powder on top, stir and let it bloom for a minute or so.
  • Heat the saucepan on medium-low heat until the gelatin has melted. Use a whisk to make sure there are no lumps. Add honey and vanilla extract and mix well.
  • Pour the mixture into molds and place it in the fridge for about an hour.
  • Carefully remove the gummies from the molds. I recommend loosening all the edges first so nothing gets stuck.
  • Enjoy or store in an airtight container on the counter for a few days or in the fridge for up to 2 weeks.

Notes

To play around with the sweetness you can adjust the amount of honey used. If you like things less sweet you can try less honey and taste the mixture before you pour it into the molds to adjust it to your preferred flavor. You can also add more honey if desired.
