Kale Cilantro Omelette
Start your day in a healthy way with this cilantro and kale omelette. It is gluten and dairy free and AIP and Paleo friendly.

- 4 eggs
- 1/2 small onion
- 2 leafs dinosaur kale
- 4 tbsp Cilantro
- sea salt and pepper
Whisk up the eggs in a medium bowl. Peel and dice onion. Cut kale and cilantro into small pieces. Add the vegetables to eggs. Add salt and pepper to your liking and mix well.
Heat avocado oil in a medium pan over medium heat. Add the egg mix into the pan.
Fry on both sides until golden brown. Add some fresh cilantro as garnish.
