Roasted Cauliflower Garlic Dip
This delicious roasted cauliflower garlic dip is the perfect way to get in extra vegetables while snacking. It is dairy free, nut free, paleo, and AIP.
- 1 head cauliflower
- 1 head garlic
- 5 Tbsp extra virgin olive oil (for roasting)
- sea salt and pepper (omit pepper on the AIP)
- 4 Tbsp extra virgin olive oil
- 1.5 limes squeezed
Preheat oven to 350 degrees. Wash and cut cauliflower into florets, peel garlic and place on a baking sheet. Drizzle with olive oil and season with salt. Bake for 40 minutes or until golden brown and cooked through. Turn the vegetables halfway through.
Let cool off. Place vegetables and the rest of the ingredients in a blender and mix until smooth. Taste and add more salt and pepper if necessary.
