Strawberries and Cream

This strawberries and cream recipe is the perfect super delicious quick and easy summer dessert. It is Paleo and AIP compliant and of course dairy and gluten free.

Ingredients
  

  • 1.5 cups strawberries ripe
  • 1/2 cup canned coconut cream (the thick part of canned coconut milk, see notes below), additive free if you follow the AIP
  • 2 tsp vanilla extract (alcohol free if you follow the AIP)
  • 1 pinch sea salt
  • 1 tsp honey (more or less depending on your sweet tooth)

Instructions
 

  • Wash and cut the strawberries. Smaller pieces will give you a more flavorful cream.
  • Mix the coconut cream with vanilla extract, sea salt and honey.
  • Add the strawberries to the coconut cream and mix well.
  • It tastes best when eaten right away. Enjoy!

Notes

  1. Coconut cream is the thick part that rises to the top of coconut milk. You can either buy the canned cream directly or scoop out the creamy part on top of the coconut milk.
  2. Make sure you buy full fat coconut milk. Also cream of coconut and coconut cream are NOT the same thing. If you are using the creamy, solid part on top of the coconut milk, buy additive free coconut milk.
  3. It also helps to chill the coconut milk for a couple of hours or overnight to achieve a better coconut cream consistency.
  4. Unless you make your own coconut milk, every brand behaves quite differently. I encourage you to play around with different brands until you find the one you love the most.
