Chimichurri with a Twist

This delicious chimichurri goes with your favorite protein. It is a healthy dip featuring parsley, cilantro, olive oil, avocado, garlic, lime and shallot.

Ingredients
  

  • 1 cup cilantro (packed)
  • 1 cup parsley (packed)
  • 1/2 medium size avocado (try 1 avocado for a creamier version)
  • 3 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1/2 shallot
  • 1 clove garlic (try 2 if you like it more spicy)
  • 1/2 lime, squeezed
  • 1/2 tsp salt

Instructions
 

  • Place all the ingredients in a blender and mix until smooth.
  • Serve with your favorite protein
  • Enjoy!

Notes

  1. If you love garlic and want the chimichurri to be a bit spicier try 2 garlic cloves.
  2. If your avocado is very small or if you would like a milder, creamier sauce use 1 whole avocado.
