Ingredients

  • 3 medium ripe peaches
  • 2 tsp coconut oil
  • 2 tsp honey
  • 1/2 tsp cinnamon
  • coconut yogurt (topping), or another topping of juice

Instructions

  • Preheat the oven to 350F degrees. Cut the peaches in half and remove the stone. Place them in a casserole or other glass dish.
  • In a small bowl mix together coconut oil, honey, and cinnamon. Glaze the peaches with it and bake them in the oven for 30-50 minutes. Baking time depends on how ripe your peaches were and how juicy you want them to be. I would check after 30 minutes and poke them with a fork to check. You could use this time to baste them as well.
  • Once the peaches are done to your liking, serve them with a tablespoon of coconut yogurt. Another option would be ice cream or coconut whipped cream.
  • If you have leftovers, store them in a glass or stainless steel container in the fridge for a couple of days. Warm up the peaches whenever you want to enjoy them.
