Kale Cilantro Omelette

Tired of your usual breakfast eggs? Try this kale cilantro omelet to spice it up and start your day with a  serving of veggies. Loading up proteins and vegetables for your first meal is a great way to set yourself up for a day of healthy food.

This recipe is super easy and fast to make. Simple chop up some onions, kale, and cilantro and mix it together with your eggs. Feel free to get creative and add the veggies of your choice, or whatever you have in your fridge at the moment. Adding your favorite spices to make it tastes just the way you like it is always a great idea. 🙂

Simply fry in avocado oil until golden on both sides and add some fresh cilantro as garnish.

Kale Cilantro Omelette

Start your day in a healthy way with this cilantro and kale omelette. It is gluten and dairy free and AIP and Paleo friendly.

Servings 2 people

Ingredients
  

  • 4 eggs
  • 1/2 small onion
  • 2 leafs dinosaur kale
  • 4 tbsp Cilantro
  • sea salt and pepper

Instructions
 

  • Whisk up the eggs in a medium bowl. Peel and dice onion. Cut kale and cilantro into small pieces. Add the vegetables to eggs. Add salt and pepper to your liking and mix well.
  • Heat avocado oil in a medium pan over medium heat. Add the egg mix into the pan.
  • Fry on both sides until golden brown. Add some fresh cilantro as garnish.
  • Enjoy!
