I love recipes with very few ingredients. This yummy healthy egg salad is one of my new favorites. If you tolerate eggs you have to try this one. It is oh so creamy and delicious! And the best thing is that you don’t have to worry about any hidden ingredients that could harm your health. Because instead of using mayo I am using my favorite ingredient. Yes, you guessed right, avocado :).
Packed with nutrients and healthy fats this delicious egg salad will fill you up for hours.

When buying eggs it is very important to opt for pasture-raised eggs. There is a lot of misleading labeling when it comes to eggs. You could have the best intentions buying organic or free-range eggs, thinking your eggs come from happy chickens roaming around free on beautiful green grassland. But that could be far from the truth. The term pasture-raised is what you want to look for. If you really want to be sure where your products come from, the best thing you can do is buy from your local farmer. You could even make a fun day trip and visit your local farm. This healthy egg salad only takes 10 minutes to prepare, given you have the boiled eggs ready. To speed up the process, even more, use an egg slicer (see picture). If you are incorporating eggs into your diet I recommend boiling a bunch of them once a week. That way you will have them ready in the fridge for a quick snack or to whip up this avocado egg salad. Just make sure you remember the expiration date.
Depending on the color of the egg yolk and the avocado that you are using this egg salad might look slightly different. I had all shades from bright yellow to soft green using the same ingredients, but it always tasted the same. If you are using a very small avocado you might wanna use more than 1/2 to make it creamier.

Healthy Egg Salad

You are going to love this delicious creamy egg salad that is packed with healthy fats. It uses avocado instead of mayo and is dairy free.

Course Breakfast, Salad, Snack
Servings 1 small bowl

Ingredients
  

  • 4 pasture raised eggs hard boiled
  • 1/2 avocado (or more if you want it creamier)
  • 2 tsp lemon juice fresh
  • sea salt and pepper

Instructions
 

  • Mash avocado in a medium bowl, add lemon and mix well.
  • Peel and cut eggs into very small cubes.
  • Mix egg with mashed avocado and stir until you have a creamy egg salad.
  • Add salt and pepper to your liking.
  • Enjoy!
